Autumn is my favorite season. Crunchy leaves, woolly jumpers, cosy early nights – I love it all.
I also love the change from light summer foods to heartier fare. But now that the clocks have gone back and night is closing in, I want to be in bed (or at least snuggled under a blanket on the couch) early, not slaving over the stove or washing up.
So this week’s recipes are simple, no-fuss comfort foods. From a spicy chicken casserole to a hearty vegetarian pie, these dishes can easily be whipped up on a weeknight evening and still give you time for an episode of Bridgerton.
