Poha idli

Ingredients:
1 cup Poha
1 Cup Rice rava
1 Cup Curd
Water
Salt as per taste
Half tbsp fruit salt

How to make:
First, grind the poha and add one cup of curd and mix it well. Now add rice rava and keep blending the batter. Add salt and water to form an idli batter and keep a check on the consistency. Cover this batter and let it ferment until the rava soak up the water. Pour the batter into the idli maker and steam till cooked.

Aloo suji idli

3 Cups Sooji
2 Cups curd
Half tbsp fruit salt
2 Boiled Potatoes
Red Chilli Powder
Turmeric Powder
1 Green Chilli

How to make:
Take some suji and curd, mix it well and leave it to ferment for 1-2 hours. Mash boiled potatoes and add spices such as red chilli, turmeric, green chilli, and salt as per taste. Once the batter ferments, add the fruit salt and mix again. Now pour the batter into the idli maker, fill half of the dish and add the prepared aloo masala in between. Cover the idli batter from the top. Steam till the idlis are nicely cooked.

Cucumber idli

Ingredients:
1 cup grated cucumber
1 cups Suji or rava dosa rice powder
Half cup chopped coriander
1 chopped chilli
1 cup Grated coconut
Salt as per taste

How to make:
In a bowl grate the cucumber and squeeze out all the water. Now, take another bowl add the grated cucumber, suji/rava rice powder, chopped coriander, chilli, coconut and salt and mix it well. Add the water to the batter for the right consistency. Now place your steamer on the gas, add the batter to the idli maker, and let it steam until it is cooked.

Kanchipuram idli

Ingredients:
2 cup rice
4 Tbsp sooji or rava
Some chopped carrots, beans and mashed green peas
Salt to taste

How to make it:
Grind rice after soaking it in water for 2-3 hours. Make this into a batter, by adding roasted rava to the batter. Add salt and chopped vegetables. Put into the idli maker and steam for 10 minutes.

Oats Idli

Ingredients:
2 cups oats
Curd, slightly sour
Mustard seeds
1 cup urad dal
Half cup channa dal
1 tbsp oil
1 green chill, finely chopped
1 cup grated carrot
2 tbsp finely chopped coriander
1 tbsp turmeric powder
Salt as per taste
Pinch of fruit salt

How to make:
Take one tawa and roast the oats until it turns golden brown and grind the oats. In a pan, add oil, mustard seeds, urad dal, channa dal. Add the chopped chillies, coriander and grated carrots. Mix the turmeric powder and fry for a minute. Add this seasoning to the powdered oats and add curd to it to form a batter. Grease the idli steamer plates with oil and pour the batter into an Idli maker. Steam the idlis for 15 minutes.
