Or do you turn to your good old cookbooks that are sitting in your kitchen shelves? These three recipes are easy to throw together and are relatively healthy, too!

Mango Custard Bread

Following the Tiktok trend where you use fresh bread and a mixture of Greek yogurt, eggs, and honey, my daughter Gia used some fresh croissant bread that her friend brought over for quick brunch. The process is so easy and yields delicious results!

Ingredients:
3-4 slices fresh bread
1 c Greek Yogurt
1 egg
½ tsp vanilla
½ tsp ground cinnamon
1 Tbsp honey

Directions:
Line baking sheet with baking paper
Preheat oven to 180°
Using a spoon, measuring cup, or glass press a well into your bread that will be ready to receive the yogurt custard and fruit.
In a bowl combine yogurt, egg, vanilla, cinnamon, and honey until smooth.
Carefully spoon the custard into the pressed well of your bread, place your fruit on top, and bake for 10-12 minutes

Cheesy Berry Danish

Inspired by the recent Valentine’s Day episode and the French episodes of Kitchen 143 combined, Gia prepared Danish pastries with the help of frozen puff pastry dough! Having puff pastry in the freezer is something that my friend Alex Lizot says is a staple in every French kitchen, and makes this recipe accessible and something super special. Rolling out the puff pastry is a delicate process, so it’s important to be mindful not to let the dough sit out too long before pulling this all together.

Ingredients:
1 roll of Puff Pastry
8 oz cream cheese
¼ c granulated sugar
1 egg yolk
1tsp vanilla extract
Lemon zest
Assorted Berries

Directions:

Preheat oven to 200°
Combine all filling ingredients and whip until smooth.
Set aside.

On a lightly floured surface roll out your puff pastry dough and cut into shapes using cookie cutters of different sizes. For the larger cut out, cut all the way through the dough for the shape. Using a knife or a smaller cookie cutter of the same shape, press halfway through the dough so that it will allow the puff pastry to rise around the filling.

Fill in the center of the dough with the cream cheese mixture, leaving the rim to be brushed with egg wash. Sprinkle with turbinado sugar and bake at 400° for 14-16 minutes or until golden.

DIY Strawberry Peach Yogurt Drink

Yogurt drinks with a twist were something we came across while in quarantine, ordering from the new joint that opened up just down the road in Uptown Mall. While everyone has their go-to favorite cold treats, I made this Koomi hack fashioned after “Nuts About You,” using what I had available in the house. Honey to taste
1 c ice
1 c milk

Directions:
Blend all ingredients

Drink immediately
